Strawberry Basil Shrub Salad
Strawberry Basil Shrub with burrata cheese, marinated tomatoes and baby arugula.
Ingredients:
1 4oz ball of Burrata Cheese
½ cup Cherry Tomatoes Halved
½ cup Baby Arugula
¼ cup good extra Virgin Olive Oil
1/8 cup shaved Sweet Onion
1 tsp minced Shallots
½ tsp minced Garlic
1 Tbsp Chopped Parsley
¼ tsp Chopped thyme
1 Tbsp Pascale’s Strawberry Basil Shrub
Salt (coarse sea salt is a great textural addition) and Fresh Cracked Black Pepper to taste
Directions
Take half of the olive oil, shallots, garlic, herbs, and tomatoes, combine and let marinate for at least 30 min. Arrange the arugula and tomatoes in the bottom of a shallow bowl, Top with the burrata and shaved sweet onion. Drizzle the remaining EVOO and Strawberry Basil Shrub, and season with coarse sea salt and fresh cracked black pepper.
